Chicken Salad: A Delicious Summer Meal

Summer is the perfect season to eat salads because they are so fresh and delicious that you can never get tired of eating them.


A good salad for summer is, chicken salad. This salad is perfect for a picnic or a barbecue. You will be amazed on how you can use a few ingredients can be transformed into a cold creamy salad or filling that’s perfect for a homemade chicken salad sandwich or wrap.


This is a simple and last minute recipe, but very delicious.


Ingredients: - Chicken: Use leftovers from dinner or leftover rotisserie chicken or grilled chicken. - For chicken salad it is best to use poached chicken, baked chicken breasts or thighs. - Fresh chicken is preferable, but you can also use canned chicken. - Make sure the chicken is cooled and shred or chop the chicken into bite sized pieces. Add-ins: - Since this is a classic chicken salad recipe, keep the additions to the minimum. Celery for crunch, green onions for flavor. - Also, this recipe can be made with a variety of nuts, veggies, and fruit for added flavor and texture. - The chicken salad with grapes, avocado or dried cranberries is a favorite. You can also add Pecans or almonds.

Dressing: - Mayonnaise is the base of the recipe and it's simply seasoned. - If you want to be more creative, you can substitute mayo for ranch dressing or your favorite salad dressing. - You can also create an Avocado Chicken Salad by replacing some of the mayonnaise with mashed avocado.


How to Make Chicken Salad?

1) Chop cooked and cooled chicken and place it into a large bowl with celery and onions.

2) Mix dressing ingredients (per recipe below) in a bowl. Toss with the chicken.

3) Serve on rolls, bread, or over a bead of lettuce


* The salad can be prepared in 15 minutes with simple ingredients.

* Serve yourself and enjoy with your friends and family.

* If you have any leftovers you can put the chicken salad in a airtight container and it usually lasts a week in the refrigerator.
